Crispy cheese sticks but this one is a litle different. This isn’t one of those store bought packets, fried at home. These are halloumi fries. I am a huge fan of this cheese and mainly because of its texture like paneer but also the taste of this cheese is amazing once grilled or pan fried. If you don’t know what halloumi is, then:

Halloumi or haloumi is a semi-hard, unripened, brined cheese made from a mixture of goat’s and sheep’s milk, and sometimes also cow’s milk. It has a high melting point and so can easily be fried or grilled. It comes from the Cyprus region of Greece but is eaten in some parts of Turkey and Middle-East as well.

For this recipe to be less guilt ridden, I used the new Princess Air Fryer to make them in less than 15 mins. The whole block of 150 gms of cheese was air fried in just 15 mins and ready to be served! Isn’t that cool! I have this super easy recipe for you below. If you don’t find halloumi in your supermarkets, you can try to use paneer or any such non-melting cheese as well.

  1. In a bowl mix the halloumi with black pepper, 1tsp of za'atar and flour. Coat the fries well with the flour. This will ensure that the fries get crispy and stay so for long.
  2. While doing this, pre-heat the air fryer to a temperature of 180 C for about 5 mins. After 5 mins, spray some oil.
  3. Add the fries to the tray and air fry it for 15 mins. At the end of 6 minutes give it a good stir. Don't keep them too long in the air fryer once cooked.. If you don't have an air fryer, you can fry this on a grill pan on gas. Just add a tbsp of oil and grill the sticks on each side for 2-3 mins.
  4. Squeeze some lemon juice on top and garnish it with pom pearls, lemon wedges and mint leaves. Sprinkle the remaining za'atar on them as well. I served this with harissa yoghurt. In half cup of greek yoghurt, add 1 tbsp of harissa and serve it as a dip.
