Indian-ish Brown Rice Salad

Ingredients
  

  • 300 g zilvervliesrijst (voorkeur: Lassie)
  • 200 g wortel in reepjes
  • 200 g rode kool in reepjes
  • 3 el limoensap
  • 2 tl zout
  • 200 g sugar snaps grof gesneden
  • 1 gele/rode paprika in reepjes
  • 4 el kokosolie
  • 1 tl zwart mosterdzaad
  • 10 kerrieblaadjes
  • 1 tl chaat masala
  • 50 g cashewnoten gebrand
  • 50 g sultana's of rozijnen
  • 10 g verse korianderblaadjes gehakt
  • 10 g muntblaadjes gehakt

Instructions
 

  • Bereid de rijst volgens de aanwijzingenop de verpakking.
  • Meng ondertussen in een kom de wortel en de kool met het limoensap en zout. Masseer het geheel met de handen om de intense smaken van de kool te verzachten.
  • Voeg de gekookte rijst toe aan de groenten en meng goed.
  • Verhit de olie in een koekenpan en bak het mosterdzaad. Voeg na een halve min. de kerrieblaadjes toe en zet de warmtebron uit.
  • Voeg dit mengsel samen met de chaat masala toe aan de rijst. Voeg de cashewnoten en sultana’s toe en meng goed. Garneer met de koriander- en muntblaadjes.
  • Tip: Dit gerecht is het lekkerst op kamertemperatuur.

300 g brown rice (preferably from the brand Lassie)
200g carrot, in strips
200 g red cabbage, in strips
3 tbsp lime juice
2 tsp salt
200 g sugar snap peas, coarsely chopped
1 green bell pepper, in strips
4 tbsp coconut oil
1 tsp black mustard seeds
10 curry leaves 
2 tsp chaat masala
50 g cashew nuts, roasted
50 g sultanas or raisins
10 g fresh coriander leaves, chopped
10 g fresh mint leaves, chopped
Method:
  1. Cook the rice according to package instructions.
  2. Meanwhile, in a bowl, mix the carrot and cabbage with the lime juice and salt. Massage with your hands to soften the intense flavors of the cabbage.
  3. Add the cooked rice to the vegetables and mix well.
  4. Heat the oil in a frying pan and fry the mustard seeds. After half a minute, add the curry leaves and turn off the heat.
  5. Add this mixture to the rice along with the chaat masala. Add the cashew nuts and sultanas and mix well. Garnish with the coriander and mint leaves.
Tip: This dish is best served at room temperature.
