Vegetable Stew is popularly also called as Veg Ishtu in Kerala and is one of the favourite breakfast item served with appam, iddiappam and its one of the simplest curry with coconut milk and mixed vegetables. There are different ways of making this ishtu and you can choose to add any veggie combination in it. Here I have used the mostly known ones. You totally need to give it a try if you have never eaten it before. It is completely vegan and glutenfree Indian curry that you cannot miss trying.

Instructions
  1. Boil the diced potatoes with water, turmeric powder(a pinch) and salt until cooked.
  2. Heat a sauce pan and add the chopped vegetables; beans,carrots and sweet peas. Add 1/4 cup water and salt, cook until done.
  3. In another pan, heat oil. Add cinnamon, cloves and cardamom. Add the sliced onion, curry leaves and saute until translucent.
  4. Add the chopped garlic, julienned ginger, green chilli and saute until the raw smell disappears.
  5. Add turmeric powder, pepper powder and garam masala. Saute the spices on low flame and finally add the cooked vegetables (including the boiled potatoes).
  6. Add the coconut milk and salt as per taste. Add water if required (if a little liquidy curry preferred).
  7. Bring to a boil and let the flavors get nicely infused.The gravy will thicken slightly after 3-4 mins. Turn off heat immediately, mix well and adjust salt if required, leave covered for 5 minutes. Garnish with fresh coriander leaves and some more julienned ginger.
  8. Serve hot with appam, iddiappam, rice or simple neer dosa.
