Grilled Sandwiches are my absolute favourite and especially when you are subjected to cold temperatures like I am these days since I have moved to the Netherlands

This Grilled Vegan Panini is a super easy breakfast option and can be taken easily for work as well. I have paired it with some fresh strawberry milkshake because this is the season for strawberries here and you are getting them in bundles and bundles.

Ingredients:

  • Panini Bread
  • Veggies – Mixed bell Peppers, Tomatoes, Zucchini
  • Lettuce/Baby Spinach
  • Hummus/ Vegan Mayonnaise (I have used hummus in this recipe)
  • Salt and Pepper

Method:

  • Apply the hummus on both sides of the bread
  • Make a layer of lettuce or any leaf that you are using on both the sides
  • Add the veggies and grill this for good 5 mins on medium heat for that char on the bread
  • Serve this hot
