Who doesn’t like a simple yet flavorful one pot rice dish? I am always on the look out of such recipes. Pilaf or Pulao are my go-to recipes always at home but I cook them mainly with vegetables, chicken or paneer. But Turkish Pilaf with Dry Fruits & Apricots is a very easy yet great substitute to the veggie filled pilaf. Also there are days when the fridge has no fresh veggies but the kitchen closet has enough dry fruits.

I think I created this recipe few months back when we had a sudden guest at home and I have this overpowering nature of feeding whoever visits me home. And I did ask the guest to stay back for a quick meal only to realize I have no vegetables at home. And this quite dry fruits filled Pilaf was appreciated back then and is even today. I say if you are facing something similar at home ever, this will save you.

I used Sella Rice which is a variety of the regular Basmati rice. I love the firm texture that this rice has and is perfect for sturdy pilaf or Biryani recipes. You can ofcourse use any Basmati rice, try and get the long grain one for the amazing aroma. Anyways, I don’t want to keep typing over and over about this amazing one pot wonder, and would like you to try it too.

Turkish Pilaf with Dry fruits & Apricots Yum
Instructions
  1. In a pan add almonds and pistachios and toast them lightly by shaking and tossing, until the nuts smell great. Remove them into a bowl and keep it separately.
  2. In a large saucepan, melt butter over medium heat. Add the chopped onion and garlic and sauté them until translucent.
  3. Add the washed and drained rice to the pan and stir it for a min before adding the spices and dry fruits.
  4. Now add all the spices (as mentioned under the section called ‘spices’) and sultana, apricots and the broth. Stir it well.
  5. Bring it to a good boil and then let it cook on medium to low flame with the lid.
  6. In 15 mins the rice should be cooked. Don’t disturb the rice and remove it from the heat. Let the lid stay.
  7. After 15 mins, remove the lid and using a fork fluff the rice. Check for the seasoning and add salt if needed. Add in the roasted nuts (from step 1) and chopped parsley.
  8. If you like you can garnish this dish with some more nuts and chopped parsley at the end just before serving. Serve this hot!
