Recently I have collaborated with other fellow bloggers on Instagram to start the #stayhealthysuppers series to push all of us to eat healthy after a long day of work. It is always easy to not eat healthy and resort to a simple bowl of maggi or loads of carbs instead of balancing the last meal of the day to have a fresh start in the morning.
Well our attempt to start this is to give few options for healthy and easy suppers that everyone can prepare quickly or even meal prep in advance over the weekend.
Turkish Bulgur and Lentil Soup
I have started going to the gym recently after a break of almost 1.5 to 2 months and my body has already started crying. Meals like these make up of those crying muscles in my body. So today's Supper is this Turkish Bulgur and Lentil Soup. This is like the easiest recipe for a supper and super filling.
Perfect weeknight meal for the family ready under 35 mins. Thanks to all that fibre from bulgur - you would thank me tomorrow morning for sure!
Dry roast both bulgur and lentil separately and keep them aside. This step takes less than 5 minutes
In a Dutch oven/heavy bottomed pan, temper cumin seeds, garlic, bay leaf and cloves and cardamom in olive oil.
Add the chopped vegetables and sauté everything on a medium flame for 5 mins.
To this add the dry roasted bulgur and moong daal and tossed everything together. Then add the ground masalas along with vegetable stock. Toss everything for 5 minutes on medium flame
Add 2 cups of water and let this cook under a cover for 10 - 15 mins till the daal/lentil is cooked.
Serve this hot with fresh coriander leaves, lemon wedges and lots of love ❤
