Not every meat dish needs to be fancy and should take long time to be flavorful. If you haven’t tried Thai lemongrass spicy chicken then you have really missed out on something so delectable and so not subtle in flavor. It is a blast of so many things in your mouth, you will go ga-ga with just the first bite. I made it to go with my Thai fried rice

but you can eat it with plain rice or with some noodles on the side/ramen whatever you like to have it with. I also pair it with some bread and sauces and have it like Vietnamese Bahn Mi. It is one versatile dish trust me!

  1. In a bowl, toss the chicken cubes with 1 tbsp oil, salt and pepper.
  2. In a wok/heavy pan, add the chicken and stir fry over high heat until you observe brown spots indicating that the chicken is cooked. You can transfer the chicken and transfer it to a plate.
  3. In the same pan, add the remaining oil and fry the shallot, garlic, lemon grass on high heat. In 2 minutes you can add the sauces (fish sauce, oyster sauce) along with chilli oil, scallions, thai chilli pieces. Stir everything well and let it cook for another 2 minutes and finally add the chicken cubes and fry everything together. Add the water to this and let it cook under a cover for 5 mins and then we are ready to serve.
