Sambar is one of the best form of vegan source from a mixture of lentils and vegetables giving a depth of umami flavor. It can be paired with idli, dosa, uttapams or just with rice. It even tastes great with quinoa too.
Makes it a perfect weeknight meal which can be prepped in advance by chopping the veggies and storing them in an air-tight container. There are various types of sambar that could be made, this one is a mix veg one.
