Sambar is one of the best form of vegan source from a mixture of lentils and vegetables giving a depth of umami flavor. It can be paired with idli, dosa, uttapams or just with rice. It even tastes great with quinoa too.

Makes it a perfect weeknight meal which can be prepped in advance by chopping the veggies and storing them in an air-tight container. There are various types of sambar that could be made, this one is a mix veg one.

Sambar / Sambhar Yum
  1. Firstly, in a pressure cooker add ½ cup of toor daal with 2 cups of water. also add pinch of turmeric. pressure cook it for 5 whistles or boil it for 20 mins under a cover.
  2. In a pan, add a teaspoon of oil, add the chopped veggies and saute for 5 to 10 mins on a medium flame.
  3. Once the veggies are somewhat cooked in 10 mins, add turmeric powder and salt to taste.
  4. Meanwhile, once the daal is cooked mash it well.
  5. After 10 more minutes, the vegetables should be cooked properly, now add the mashed daal and bring it to boil.
  6. Add 2 tsp of sambar powder. Mix the sambar powder and bring it to boil.
  7. Prepare the tempering by heating urad dal, mustard seeds, hing, curry leaves and red chillis.
  8. Finish this with some jaggery/sugar and some tanginess from tamarind/lemon/gooseberry.
  9. Add the tempering to the freshly prepared sambar
  10. Sambar is ready! Remember to serve this hot!
