Sabudana or Tapioca pearls are an absolute favourite in Indian meals. It is consumed in various forms right from a Khichdi (spicy porridge), Papad (dried version fritter), vada (fritter), Sago Pudding. Tapioca is a good source of protein, which helps with muscle building, healing and strengthening. Sabudana Khichdi proves to be a good source of proteins for vegan and vegetarian diet followers. Tapioca is rich in iron and calcium, which helps maintain bone health.

It is also something that is made during the fasting season in India. In Maharashtra, at my in-laws home we follow the monthly fast based on the phase of moon called ‘Sankashti Chaturthi’ and that is when this is made every month. I would rather put it this way, because I get to eat this, I would like to follow a fast like this.

It is very high in carbs, fibre but good carbs I say. And when it is made with peanuts and potatoes it is a yummy and healthy combo. It fills you up for a very very long time for sure.

Ingredients for 2 people:

  • Tapioca Pearls – 100gms
  • 1 medium potato – boiled and diced into cubes
  • Green Chilli – 1 large
  • Peanuts – 10 gms
  • Coriander Leaves
  • Some cumin seeds
  • 1 tablespoon Ghee/vegetable oil
  • Salt as per taste
  • 1 teaspoon sugar

Method:

  • For this you need to soak the Tapioca overnight and in the morning wash it very well such that all the white starch gets washed away, else it gets all starchy and sticky.
  • In a pan, temper some ghee (clarified butter), some cumin seeds, and potatoes. You can used boiled potatoes to speed up the process.
  • While this is happening, add coarsely ground peanuts, salt, sugar to the sabudana and keep it that way for 10 mins while the potatoes cook.
  • Once done, add this together in the bowl and put it into the microwave and cook for 10 mins or till the pearls become transparent.
  • Garnish this with fresh coriander leaves.
