Dosa without Potato Sabji or that yellow filling inside is incomplete. And if you read the recipe below you can make this easy recipe of Potato sabji for dosa in no time. This sabji (dry veggie) can be paired with rice and daal or even just with rotis/chapatti as well.
I like it outside my dosa instead of it being inside, little weird I know! But everytime I make dosa at home or eat outside that’s how I prefer it. Are you a fan as well?

Masala Dosa – potato filling inside the Dosa

- 2 medium Potatoes (boiled)
- 1 medium Red Onion (Thinly sliced
- 1 large Chopped Green Chilli
- 1/2 inch Finely chopped Fresh Ginger
- 1 Dried Red Chilli (optional)
- 1 tsp Cumin Seeds
- 1 tsp Mustard seeds
- 1/2 tsp Turmeric Powder
- Pinch of Asafeotida / Hing
- Handful of Curry Leaves
- 2 tsp Lemin Juice
- 1 stem Coriander Leaves (Finely chopped)
- 2 tsp Oil
- Salt to Taste

- Boil the potatoes well and peel off the skin. You also have the potatoes with the peel (it is upto you).
- Finely chop green chillies, ginger, coriander leaves. Also thinly slice onion and keep ready.
- In a pan heat a tablespoon of oil and add cumin seeds, mustard seeds, red chilli. Wait till mustard seeds splutter.
- Then add curry leaves and hing. Fry for a minute. Now add thinly sliced onion and fry till then turn translucent.
- Add in finely chopped chilli and ginger. Fry till the raw smell of ginger goes away. Now add boiled potatoes and turmeric. Cook for 3 mins
- Squeeze some lemon juice and add chopped coriander leaves. give a good mix. Serve aloo bhaji hot with masala dosas, rice or chapatis.
