Its Summer time in the Netherlands. Hoorayyyyyy! And what does summer mean? It means going out more often, meeting friends, having friends over for food and drinks and lots and lots of picnic outings. This Peppery Peach sauce is the perfect companion for that with almost every thing that you plan to carry. It can be used as a dip, spread, sauce as well.

The Peppery Peach Sauce has the tangyness from the Peach and then the spiciness from the pepper and definitely salt balances the taste. I came out with this concoction as an experiment and boy! I am so excited. Cant wait to have friends over and have them all taste this. The husband has already given his seal of approval. yaay!

I made only one back of the Peppery Peach Sauce this time as an experiment but for sure will be making more of it in the next few weeks and might even give it out to friends as a care package along with my other spice mixes and chutneys. You should totally be my friend if you still aren’t!

Peppery Peach Sauce Yum

Instructions
  1. Wash, peel and pit fresh peaches. Cut them into small cubes. The smaller they are the quicker they cook.
  2. In a pan, add a tsp of olive oil, within 10 seconds add the grated ginger. Saute this for a minute on medium flame.
  3. In the same pan, add the finely chopped red pepper and saute them for another minute. That's when you add the peach. Mix everything well. Don't add water at all!
  4. Let the peach cook for atleast 10 minutes and you will start seeing that its getting softer. Using the back of your spoon, start mashing them. This makes the blending process very easy.
  5. Add the vinegar, sugar and salt now and let this cook for another 5 minutes.
  6. Cool this away from the flame for 10 minutes before blending it into a paste.
  7. Using a hand blender, blend everything into a smooth paste and store in an air tight container inside the refrigerator for upto 2 months. Be very careful while using the sauce, never use a wet spoon or reuse an old unclean spoon.
