Paneer Jalfrezi

Jalfrezi (also known as jhal frezizalfrezizalfraizijaffrazi) is a curry dish from India. According to Wikipedia source, Jalfrezi recipes appeared in cookbooks of British India as a way of using up leftovers by frying them with onions and chili. This is more like a vegetable stir fry mixed with Indian spices and paneer for that extra protein content. There are variation to this dish with just vegetables (without paneer) or also with chicken calling it then Chicken Jalfrezi. If you are allergic to lactose or prefer vegan, substitute paneer with firm tofu very easily. You would hardly notice any change in the flavor of the dish.

Paneer Jalfrezi is a quick but a dry dish which means there is no gravy, thus making it a perfect dish with pulao or biryani in case of rice and naan, chapati or parathi for those who prefer bread. I had it last evening with some hot paratha and a side of fresh salad. I am sure I slept peacefully, thanks to the meal.

Paneer Jalfrezi Yum
  1. Add oil in a heavy bottom sauce pan. Once warm, add cumin seeds and let is sizzle for 30 seconds. Add the onions and fry for 2-3 minutes on medium heat. As they begin to soften add the minced garlic and fry for 1 minute.
  2. Proceed to add spices – turmeric powder, Kashmiri red chilli powder, coriander powder and stir on a medium heat for 1 more minute. If the spices stick to the base of the pan add a splash of water.
  3. Follow this up with the chopped bell peppers and tomato. Don't cook it for too long as you will lose the crunch of the bell peppers. Just 10 mins cooking on a medium flame is enough.
  4. Add the paneer cubes along with salt, lemon juice and garam masala and mix everything - not too rapidly but very gently. Stir fry this for another 2-3 mins and garnish it with fresh coriander leaves
  5. Serve this warm with rice or paratha/naan.
