I am sure you are in a fix on most days for a good warm dinner option. This could be one of those options that you add to your list. it can be cooked in no time and if meal prepped by chopping vegetables in advance then you are golden. I love such one pot quick vegan curry options and keep experimenting with different vegetables always.

I have added bell peppers, carrots, sweet potatoes, zucchini, egg plant in this curry but you can add anything else as well. It is your choice totally. Also this can be clean your fridge kind of option too. It is not just #vegan, it is also #glutenfree and #alcoholfree too.

One Pot Quick Vegan Curry (Under 20 mins) Yum
  1. Chop all the vegetables and be ready. We need to add all of them based on their cooking time. You can use any combination of vegetables at home. This is one such 'add anything to it' kind of a curry.
  2. In a heavy bottomed pan, add oil and once it is hot enough, add the onion. Saute it till it turns golden brown. Add the grated ginger and let it cook for a few minutes. At this stage start adding all the vegetables - I started with sweet potatoes and cooked it for 2-3 minutes, followed with carrots, egg plant and zucchini. Cook them for another 5 mins on a medium flame.
  3. Add turmeric powder and cumin powder on low to medium heat. Add 1/2 cup of water and bring everything to a good boil at this stage. Add coconut milk and bring everything to a good boil again and let it simmer for 10 mins. Check the seasoning. Add salt as per your taste.
  4. Serve it hot with some steamed Basmati rice and garnish the curry with some coriander leaves (optional) and a wedge of lime.
