Every region or country in this world loves their eggs and cooks it in their style, be it runny scrambled eggs or smooth scrambly eggs, there are so many types of them. But just imagine have soft scrambled eggs mixed with some cheese – thats Menemen, Turkish scrambled eggs.
My latest fascination with the Turkish cheese in the kitchen knows no bounds. I have been experimenting it away with several dishes but this dish happened to be one of the favorite breakfast dishes in Turkey. It goes perfect with some Simit (Sesame topped Turkish bread) or any other regular bread as well. This dish is different to a Shakshuka as it is not majorly a tomato dependent dish but rather the hero here is egg and cheese.

- 5 Large Whole Eggs
- 150 gms Beyaz Peynir
- 2 small Red Onion (finely chopped)
- 4 medium Tomato, chopped
- 2 tbsp Freshly Chopped Parsley
- 1 cup Chopped Green & Red Bell Peppers
- 1 tbsp Aleppo Chilli Flakes
- 1 tsp Salt
- 1 tbsp Lime Juice
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tbsp Butter

- Now add the chopped tomatoes and stir everything well till the tomatoes turn soft and mushy. Add the chilli flakes for spicyness.
- Mix everything slowly on medium flame to not cook it into too hard scramble, but rather a soft spongy scramble. After 5 minutes add the peynir. It has a feta like consistency but is a very salty cheese, thus be careful while adding any cheese to the eggs. Break the cheese while add it to the pan, it will crumble in your palms. Give everything a good mix.
- Add lime juice and garnish it with fresh parsley. Enjoy this soft spongy smooth breakfast with some Turkish Simit (bread) or any other type of bread and ofcourse some turkish coffee on the side.
