And that red color is thanks to Kashmiri Laal Mirch that is used in this cuisine giving it a distinct color and not much of heat. The use of garam masala or whole spices like Cardamom, Cloves and Cinnamon takes the food to a different level.

- 500 gms Chicken Legs/Wings/Curry Cut
- 1 medium onion (finely chopped)
- 1 medium Tomato (diced)
- 1 tbsp Ginger Garlic Paste
- 1/2 tsp Turmeric Powder
- 1 tsp Kashmiri Red Chilli Powder
- 1 tsp Fennel Powder
- 1 tsp Coriander powder
- 1 tsp Garam Masala
- 1/2 cup Plain Yoghurt
- 1/2 tsp Cumin Seeds
- 2 tbsp Oil
- 2 pods Cloves
- 2 pods Green Cardamom
- 1 Bay leaf
- 1/2 inch Cinnamon Stick
- Chopped Fresh Coriander Leaves for Garnishing
- Salt to Taste

- In a pan add oil and saute cloves, cardamon, bay leaf and cinnamon on a low flame.
- Add Cumin seeds and let it splutter. To the same pan add chopped onion and garlic - ginger paste and saute for 5 mins till it changes color. It shouldn't turn brown.
- Add tomatoes and mix everything together.
- Now add the chicken pieces. The chicken needs no marination and thus making this Dish a quick to-go meal option.
- Add all the ground masala on a low flame and mix everything well and let it cook.
- Add 1.5 cups of water and let this cook under a cover for 20 mins with occasional stirring.
- After 20 mins, oil should be seen floating on top, all this is good fat from chicken. Don't discard this.
- Add whisked yoghurt to the gravy. Season with salt and let this boil for another 5 mins.
- Garnish it with fresh coriander leaves.
- Serve hot with Jeera Rice (Cumin Rice) or Naan
