Something that I always am ready to make at home when in doubt is Jeera Rice. And its the easiest rice variation possible and can be done in no time. I generally have cooked rice leftovers few times and this is my best possible answer to those times.

Jeera Rice (Cumin Flavoured Rice)
In a rice cooker, cook the rice till its 80% ready. Or boil the rice till its 80% ready and then strain away the starch in the rice by rinsing it through a colander. Let it rest for a couple of minutes
In a non stick pan or a wok, add ghee or oil. Once its hot enough add the cumin seeds and let them splutter. Stay away from the flame.
Add the cooked rice, green chilli to the pan and toss everything well. Don't toss it too vigorously as this might break the rice grains and you might not have a free flowing jeera rice.
Let this stay in the pan for few seconds before stirring it. Keep stirring it occasionally. Add salt at this stage. The rice will crisp up slightly and will get cooked through.
Finally garnish it with fresh coriander leaves and serve it hot with any curry or daal of your choice.
