Indian Coconut Rice with Kerala Style egg roast is like match made in heaven. Trust me! Indians and south east Asians have different versions of making coconut rice and all different from each other. This recipe comes from Kerala (which is also known as the God’s Own Country owing to its widespread natural beauty).

I had this with egg roast couple of weeks back and it made my Sunday really a great one. If you haven’t been to Kerala you are missing some major food goals in life. Maybe after reading this recipe, you would be tempted to visit this place in the South of India.

Instructions
  1. Cook the rice and keep it aside. (To cook rice, wash the rice well and cook it in a pan or pressure cooker or rice cooker till al dente)
  2. In a wide pan, heat oil. Crackle the mustard seeds. Add chana daal and cashew.
  3. Add sliced small onions. When it begins to brown, add dry red chilli. Fry it for a min.
  4. Add grated coconut, curry leaves and salt. Mix well. Cook for 2-3 mins.
  5. Add cooked rice and gently mix it, till everything is combined. Cook for a min or two and remove from fire.
