It is fall as yet right, okay atleast today feels a little like fall thus presenting this Pumpkin and Halloumi salad. I can’t stop eating the fresh produce in the market. Till last year I never understood truly the meaning of fall and winter till I experienced my first winter in the Netherlands (which according to the people living in Nordic regions or Russia is a joke). I realized that how much is important to enjoy leaves and color and produce while it lasts. Winters are generally so gray and dark and sad that one can’t motivate oneself to end up doing anything productive in that timeline.

There is so much pumpkin all around us being used for cakes and cookies and bread etc. that I decided to even add it to my salad and it tasted mind blowing. Once you grilled pumpkin its get a smokiness to the inherent sweet flavor. And yes when paired with the saltiness of halloumi, the flavors reach a new level. And guess what you need no extra added salt or dressing for this salad! Isn’t that super duper cool!

  1. In a grill pan, add cooking spray and then grill the halloumi and pumpkin cubes for 3 mins on each side. This ensures that the pumpkin is cooked through and halloumi is soft enough for consumption. The Pumpkin cubes shouldn't be too thick, else it takes longer to cook through.
  2. In a bowl, layer the rucola leaves, and add the cooked pumpkin and halloumi cubes along with some pomegranate pearls and toasted walnuts. Drizzle a tbsp of olive oil and 1/2 tsp of lemon juice. And you are ready to serve it. Don't make this in advance as this makes the rucola leaves soggy and loses its freshness.
