Haven’t you tried falafel yet? They are some amazing vegan balls made out of chickpeas! They are so easy and you will discover that once you read the recipe below. You don’t also have to run to a store to eat falafels or buy the frozen one! And yes it is 100% vegan and glutenfree (what the what!) Trust me this is super duper easy. It is literally the best vegan combination possible. You can combine falafel with your salad (with some baby spinach, pom pearls, tomato and red onion slices)

I also add it to a pita and make a pocket out of like a Greek Gyro and add some tahini, tzatziki and veggies and viola my dinner is ready! You will love this combination as well.

And finally, what a great starter with some hummus on the side. I literally see myself serving this every time I have friends coming over for a meal at home. I am sure my friends would stop coming home if I serve them this once again, am sure 😛

  1. Add the soaked chickpeas (using tinned chickpeas wont be an option as you need firmer chickpeas, use the dried ones and soak them overnight), garlic, onion into a food processor.
  2. Process the mixture and soon add the green leaves, dried spices and lemon juice. Process it again and now you will see the color changing to green! Finally add the tahini (sesame paste) and chickpea flour (besan) and pulse everything well.
  3. Now to a pan add a tbsp of oil and make small round balls of the mixture. This measurement will give you 30 small and 20 medium sized balls. You can even make these balls in advance and freeze and fry them whenever needed. You can made them into balls or flatten them out (this makes frying little easier). Fry them for 3-4 mins on each side and you will see they start browning. Do that for all the sides. And you are done.
  4. You can even bake them in the oven at 200C or 400F for 18 to 20 mins on one side and another 15 mins on the other side. Preheat the oven before adding them.
  5. Serve it warm with some hummus or add it to a pita and make a sandwich/gyro with it.
