I am always on the search of easy dinner options, yes you can call me lazy but I hate spending too much time in the kitchen everyday (once in a while, ofcourse I love it). In the last few months search of vegetarian & vegan meal options have made me experiment with a lot of new options. Now some of you reading it will say Creamy Spinach Penne isn’t a new recipe, I know it isn’t but this dish doesn’t get cooked at home that often. So it is new for me! Haha 😀

Spinach is one green that is available in kgs for little to no money at all and makes me want to cook something with them every time. This is one of those dinner meals which you would like to make one a week night when you are super tired after work and go just tempted to order online and then remember wait, Paulami had posted this recipe on her website and I can totally make it. Thanks in advance 🙂

Creamy Spinach Penne is a high on fat, low carb, vegetarian dinner which can be done under 30 minutes (that’s less than the amount of time that you will need to decide the restaurant and place an order online and it getting delivered). Are you with me on this?

  1. In a pan add the pasta and 2 cups of water and let it cook al dente. It should be done in 9-10 mins. Don't drain away all the water.
  2. Meanwhile in a sauce pan, add butter. Fry the garlic on medium heat till light brown and then add chopped spinach.
  3. On low to medium flame, add the cream, salt and pepper and let it simmer for a minute before adding the cooked pasta.
  4. Add the pasta and mix everything very well. Check for seasoning. Let the pasta cook in the creamy base for 5-8 minutes. Finish it off with parmesan cheese. Eat it hot!
