I recently made Chicken Noodle Soup with Fresh Herbs and Bread on the side and I cannot begin to tell you how easy and simple this as a supper could be. It is a perfect combination of carbs from the Gluten free noodles and proteins from the Chicken and broth and the herbs fill your home with a pleasant fragrance for sure.

Instructions
  1. In a pan, add veggies like mixed bell peppers, carrots, beans, peas and onions along with minced garlic and ginger because you will love the freshness from them.
  2. I cooked these on medium heat using 1 tablespoon of extra virgin olive oil (because the chicken will ooze out it's natural oil in any case.) I used the olive oil by @olivetreetrading
  3. Add the chicken to this along with homemade chicken broth or chicken stock cubes (I will soon share how to make veggie or chicken broth at home from discarded leftovers)
  4. Season this with salt and pepper. Let this to cook for 10 mins, till you add the gluten free noodles.
  5. Add some water to boil everything together. You can separately boil the noodles as well but I prefer using one pot for cooking to save the effort later 😬
  6. After 10 mins on medium heat everything was ready. Add some fresh Herbs on top along with some butter for extra flavour (butter is absolutely optional).
