Life is all about experimenting and finding something new that you haven’t excelled yet. I am so proud of myself for taking up this challenge of baking for the last few weeks. I have a long long way to go before I make perfect baked products which are picture perfect and droolworthy but till then, this image of Sugar Free Blueberry Muffins is a pat on my back for my sincere effort of trying. Okay but let me be honest I loved the muffins and even the husband couldn’t stop eating them.

I made some Blueberry Muffins without any refined sugar. I am lately obssessed with dates paste and how it can emulate sweetness in any dish. Just dusted some sugar on the top.

Instructions
  1. In a small bowl, combine the flour, salt, baking powder and baking soda. In another bowl, combine the egg, dates paste, yogurt, oil and milk. Stir into dry ingredients just until moistened. Fold in blueberries
  2. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 - 10 minutes before removing from pan to a wire rack. Serve warm.
