Simple and yum dinner anyone? And yes its vegan and super nutritious too.

Presenting Beets, Ginger and Coconut Milk Soup with bread and some butter for a cozy dinner. It is so so easy and takes hardly any time that if you give it a try, you will thank me later. I am sure. 🙂

Beet, Ginger and Coconut Milk Soup Yum
Instructions
  1. In a large pot, heat oil over medium heat.
  2. Sauté onion, 5 minutes. Add garlic and ginger; cook, stirring often, 5 minutes.
  3. Add beets and 4 cups stock (vegetable stock preferred); bring to a boil, then reduce heat and simmer until beets are fork-tender, 20 minutes.
  4. With an immersion or regular blender, puree soup, adding remaining 1 cup stock as needed to reach desired consistency.
  5. Stir in coconut milk, salt and pepper. Garnish with parsley and julienned beets and serve with bread (if desired).
