Christmas is here almost and I am super excited for it. I can’t wait to cook a Christmas meal for my family and this year I thought of adding an Indian twist to a classic salmon dish. I love spices and in this cold weather I feel spices bring a lot of warmth. I collaborated with COOP Supermarket to prepare this Baked Salmon with Haricot verts and Potatoes dish with a twist.

This dish is super easy and requires just intermediate skills of cooking. I personally loved the flavor the garam masala and freshness of coriander leaves in the dish. Make this dish and impress your family and friends with Christmas.

Baked salmon with haricot verts and potatoes from the oven (Garam Masala flavored) Yum

Instructions
  1. Preheat the oven to 200 degrees. Cut the potatoes in thick strips lengthwise (not too thin), let the skin stay on. Place the potatoes with the cutting edge upwards on a baking tray covered with parchment paper and drizzle some olive oil and season with salt and pepper. Bake 30 to 45 minutes in the oven, depending on the size of the potatoes. Check the status after 30 mins.
  2. In a plate, place the salmon filet and add garam masala, salt and ginger garlic paste. Marinate all the pieces of Salmon filet and let it rest for 15 mins. This will bring a different spice flavor to the fish.
  3. Cut the tips of the haricots verts. Squeeze out the garlic using a garlic presser. Now place a large pan over medium heat and melt the butter in it. Add the haricots verts and saute for a while. Pour 50 ml of water, gently bring to the boil and then add the garlic and the dried thyme. Leave it for 3 minutes on low heat until the water has evaporated and the haricots are al dente. Season with salt and pepper and keep warm.
  4. Heat 2 tablespoons of oil in a large frying pan over medium heat and fry the fish for 3 to 4 minutes per side until golden brown and just done. Be very careful to not overcook the fish.
  5. Make the vegetable sauce as indicated in the packet.
  6. Serve the baked garam masala flavored salmon with the haricots verts, the baked potatoes from the oven and the herbed vegetable sauce.

Tip: Enjoy it with some good Chardonnay White Wine
