Aloo Gobi Masala is one of the most eaten vegan or vegetarian Indian dish often enjoyed with roti or naan at every Indian household. (Aloo = Potato & Gobhi = Cauliflower) This dish can be made with onion and ginger garlic powder but I made this Sattvik friendly (without onion and garlic).

I made this recently as a part of an entire meal with a lot of other goodies.

Instructions
  1. To make this deliciously easy recipe, take a pan and add oil in it. Heat it over moderate flame.
  2. As soon as the oil gets sufficiently hot, add whole cumin seeds along with bay leaves, a pinch of asafoetida and green chilli.
  3. Once the cumin seeds start to splutter, add chilli powder in the pan and mix well.
  4. After few seconds, add the potato cubes and cauliflower florets and bring the flame to medium-low. Add coriander powder, cumin powder, turmeric powder and salt as per your taste. After adding the spices (turmeric, cumin, red chilli, coriander powder), cook the sabzi on low heat for 10-15 mins. After 2-3 minutes, add chopped tomatoes and cook until done
  5. Once the cauliflower florets have been properly cooked, transfer the dish to serving bowl and garnish with a handful of fresh coriander leaves. Pair it with chapatis, paratha or even naan.
